Banana bread


1/2 c. Butter

3/4 c. Granulated Sugar

2 large eggs

2 c. Flour

3 tsp. Baking powder

Pinch of salt

3-4 medium ripe mashed bananas


In a large mixing bowl, combine butter and sugar until light and fluffy.

Add eggs, one at a time. Beat well.

Combine flour, baking powder and salt

Add flour mixture and mashed bananas alternately to butter mixture, mixing just until ingredients are moistened. Do not overmix

Pour batter into greased 9x5x3 inch loaf pan.

Bake in preheated 350° F oven for 50-60 minutes

Cool in pan on wire rack for 5 minutes then remove from pan and cool.

Store tightly wrapped

*Best served the day after baking
